Bharwa Bhindi

Bharwa Bhindi, also known as Stuffed Okra, is a delightful Indian dish that combines the earthy flavors of tender okra with a spiced stuffing.

Ingredients

250 grams fresh okra (bhindi)

4 tablespoons oil

1 teaspoon cumin seeds

Salt to taste

1 chopped Onion

Stuffing Ingredients

Salt

1 teaspoon red chili powder

1/2 teaspoon turmeric powder

1 teaspoon coriander powder

1/2 teaspoon amchur (dried mango powder)

1 tablespoon oil

2 tablespoons chopped fresh coriander leaves

A pinch of asafoetida (hing)

Procedure

1. Wash the okra thoroughly and let them dry completely. Trim both ends and make a lengthwise slit on one side, keeping the other side intact.

2. In a mixing bowl, combine all the stuffing ingredients except oil. Mix well to make the stuffing mixture.

3. Gently stuff each okra with the prepared stuffing mixture. Be careful not to overstuff them.

4. Heat oil in a pan over medium heat. Add cumin seeds and asafoetida and let them splutter. After the splutter, add onion.

5. Carefully place the stuffed okra in the pan. Sprinkle some salt over them and gently toss to coat with the oil and cumin seeds.

6. Cover the pan and let the okra cook on medium-low heat for about 10-15 minutes. Keep turning them and sprinking water on them occasionally to ensure even cooking.

7. Once the okra are tender and cooked through, remove the lid and let them cook for a few more minutes to get a slight crispy texture on the outside.

8. Garnish with chopped fresh coriander leaves.

9. Serve Bharwa Bhindi hot with rotis or rice.
